In an interview with R* they said the 2 week delay "was so you the player can get used to the game and its fetures." "We have added some new elements and we want the players to learn the game befor throing into online"

And it gives Rockstar more time to work on/tweak things before it goes live. Not to mention gives people an incentive to hang on to their copy and not trade it in after a week when Gamestop is offering a lot more trade in credit.

-they want to know how many people play the game, so they can prepare the online launch.
