I expect R* Devs will all be playing V on the day of release to see how things go and to help fix any last second niggles, so no one will be truly alone. Developers/Quality Assurance maybe, they'll probably be playing multiplayer a week before release just to see if everything is working fine just one last time. I know this because I've joined some MP sessions with developers back in the day when I used to own an Xbox Development Kit xD.. They suck ass and couldn't care less about reporting me.
