Rockstar wanted to show that the game will run well on both consoles since everyone knows it will run well on the 360 anyway. Microsoft have been known in the past to only allow games on the 360 if it's version is equal or better than the PS3 version. (This is why The Last of Us and Uncharted look insanely amazing compared to multi-platform games) They simply showcase the game on the PS3 because it is more stable and looks nicer before the optimize it before shipping.
