DakotaCSS
In the Franklin trailer released today I saw parts where Franklin had two lines going through his hair. If you look at the .Goto 0:39 seconds and you'll see it very clearly. Now look at other parts of the trailer, he only has that hairstyle with one other outfit on. Could this be a posibility of changing hairstyles, but only have a select few like we did in EFLC?
RichyB
Customisable characters will be in the game I think. In Michael's trailer you'll see he son is a right fat bastard, in the second trailer he is not. Now is this just evolution of the character as they refine the game? I don't think so. The events in Michael's trailer seem to be chronologically preceding trailer two. In Micheal's trailer he's laid in bed playing computer games, in the second trailer he is involved in missions so has to be skinnier. This leads me to believe that characters can get fat/thin and if this is possible the almost certainly they will be able to change their hair. I thought Rockstar confirmed no weight gain/loss? Something about it being difficult to pull off, with the better graphics and all. So yeah, probably development. Ex Hellraiser
I think that it is just character development. Niko had at least 2 different haircuts before GTA IV was released. Every GTA so far, characters have undergone changes in voice, appearance, etc. Franklin, Lamar, and Jimmy seem to be prime examples of this in V. I mean, just look at Franklin in the first trailer. He looked more Mexican than anything, and now here we are...

GAME INFORMER : Because Michael, Trevor and Franklin are fully fleshed out characters with specific skillt traits, Grand Theft Auto V does not have the RPG-style player customization so many people loved in San Andreas. Allowing players to gain and lose weight had a unique set of technical challenges. "The main thing is at a technical level to get the changing scale of the character - to get them bigger and smaller - is hard, and in San Andreas the standard definition graphices were more "forgiving" houser says."Doing that with 3 different characters - we definetly thought about it but decided it was impossible. We just were'nt going to get the results we want with the way the rest of the animation system works. It was just not worth making compromises elsewhere". iNero
as long as we can equip earings/studs and change the cloths individual and not by outfits like in RDR, Im fine with no muscle building/ fat gain...
