Example: an oil refinery which appeared to be living and breathing with nearly 100 NPCs working on machinery 100 NPCs? impossible. Though your point is valid, and although I would NEVER harm someone in real life, I have been desensitized to hurting people in games, I guess hurting animals in games is more of a foreign feeling. Anyways, the main thing that seems so odd is that he saw so much crazy stuff in 30 minutes. For one the number 14 about a "GTA icon" hints at the jetpack, but I really doubt the R* would show that (or anything like it) off in a 30 minute first demo.
