I dont understand definition of truck ( big car, 8 wheeler , big rig etc. ) so ill say this one, the mission your with ryder and need steal crates with forklift. I think its called a van but maybe its a truck. I dont know name but you drive, steal crates and stash it ( hide out ).

The mission on 2nd island where you need collect packages from enemies on motorcycles, theres a van/truck spawned in between the motorcycles before mission starts.If this a van ( im allowed 2nd answer ?) Only real truck mission i can come up is the trucker missions ( there on 2nd island and not story related ) i never completed so dont know motorbike part.
