I notice there are no tuts for illustrator, anyone have some foolproof resources a beginner illustrator needs to know about?

This should have more than enough tutorials for you.

Photoshop has become so powerful that most work that used to require combining Illustrator and Photoshop can now be made all within PS. Plus most of the graphics work done in the GFX section isn't really vector work.

Well, if you got to Abduzeedo and click on "Tutorials" at the top of the page, they have tutorials for Photoshop, Illustrator, Fireworks and Pixelmator.

However you want, there are no requirements in gfx unless you're feeling a particular request.

I try to keep it around signature size, 500x150.

thanks also, If I make it, it has white in the background, how do I remove the white

If the white only shows up after you save it, then you're probably saving it as a .jpg. You need to save it as either a .png or a .gif. I recommend .png for headers, because it has alpha transparency.

I need help with resizing on Photoshop. I have CS2 and CS6 extended, so i can use either one of these. (Thought that might help you to assist me)

Right basically, the limit for sigs here is 150x500. But when i make any kind of signature and upload it to the forum, it loses all sharpness and looks blurry and slightly distorted, and i cannot figure out why. I have asked you guys to resize items for my in the past and they look perfect.

What are the best photoshop settings to use when resizing a signature?

Well, there's really no such settings for resizing an image to signature size in photoshop AFAIK, but you can try messing around with Sharpen Filters if you notice a decrease in image quality.

You can also try resizing an image to sig size by holding down Ctrl + T + Shift as it helps in retaining the quality of the image. This method was taught to me by Limitless.
