Flesh-n-Bone
I think it's a side-mission activated by entering a Sea-Sparrow near your Leaf Links safehouse. You have to fly through checkpoints.
Steve Crook
There are a few of them. In all of them you have to get into a helicopter in a particular location and then go around a series of markers. There is no time limit for any of them, so the only concern is keeping your helicopter intact. They are in: Ocean Beach - from the roof that you finish up on at the end of PCJ Playground. Vice Point - from the fenced off gardens just opposite your Links View Apartment and the Pay 'n' Spray Little Haiti - on a rooftop near where you got the hidden package in the well in the roof Downtown - on the raised walkway round to the office where you started G-Spotlight Steve

flicko
The Chopper checkpoints also count towards your 100% completion, so if you want that 100%, which judging ny the fact you've made three topics in aim of acheiving 100%, so I think you do, then you need to do these. They are difficult to manouver at first, but once you get to grasp the controls better they'll become easy. Remember to go as slow as you wish if you want to complete them without having to bail half way through because your Sparrow is on fire.
