Whenever on a bike mission, use speed when your wheels are straight, and use both brake buttons for taking corners or slowing. I did all the missions to about 51% or so, now. Dude, if you done the mission do him a favor and finish it for him Of course, I would do it but I have no clue how to get a save back and fore to the PS3 Download it, extract it, plug a thumb drive in your PC and make a folder named PS3 in it and then a SAVEDATA folder and put the save in there.
