I think it's the framerate too.  I mean the Boeing 767 (GTA SA's AT-400 and the airliners that crashed into the World Trade Center buildings) goes like 6,000-7,600 mph (5,200-6,590 nautical mph) which is about 28 to 36 times faster than the Infernus in which the framerate has troubles keeping up to.  San Andreas had flyable planes and bad framerate but the planes only went probably 200-250 mph.

Look above, I corrected myself. And there is a plane (it's actually an unmanned scramjets) that go over 7,500 mph at 9.8 mach speed called the NASA X-43. Plus the X-43 (X-43D) is supposed to be able to reach mach 15 (unless it already did). The X-43 is the fastest aircraft on Earth (the SR-71 I believe is the fastest manned one but I think I read somewhere that Russia is designing a manned fighter jet that can go atleast 6 mach).
