I don't understand why when you steal a car with someone who would fight back doesn't do what the girl on the mission did. It's really a funny mission. Say you are being chased with a 3 Star+ wanted level, and you run out of an alley and see a Sabre GT, just waiting there at the traffic lights. You run up to the driver's door and jack the Driver, then you realise there's a ped in the passenger seat. So you take off, then all of a sudden the car turns left, you hit a ramp and flip your car, before you can even crawl to your feet, the cops have brutally shot you down.
