I accidentally skipped the scene and it just said saving game....so is it just a cut scene that you watch for that or did i screw up something?

Once you've spoken to PlayBoy, hours/days can pass (I did around 5 Courier deliveries and a couple of missions) before Dwayne rings you. Once he does, a red X and D will appear and you will have to make the choice who to kill before you can move further on in the story.

 

I've found how unreliable this game can be. I.e. I can finish a mission and get a phone call about something, but then my XBox will crash, and once I start it up again I won't get that phone call for hours or days.

Indeed. It does say at the start of the game, or nearish, That you can ring people up to bring the story forward quicker.
