The lack of customizable cars, ability to buy property, planes, parachutes etc, is indeed disappointing. I'm not entirely sure why R* omitted some of the things they did. I still expect it will be an awesome game overall, but it makes me wonder if San Andreas won't be better butfor the fact that it had crappy graphics. Snow would have been nice, but some of those other things just don't fit the story line. 1. No one traverses a city in an airplane. Its just not realistic. 2. Niko is a lowly immigrant, not a real estate tycoon. Property purchases just don't make sense. Maybe later in the game they should have made it possible, but its not an essential part of Niko's story. 3. Parachutes were cool, but now there are graver consequences to flying helicopters. If you get shot down, you die. Also, no planes = less need for parachutes. 4. Customizable cars was not the cool of a feature to begin with. I'd rather just have a wide range of vehicles in the game.
