You can do anything you want, it will just be like the singleplayer except there won't be missions to do. You'll have the option in turning peds/cops off aswell as what cars and weapons can be used in the game.

Pretty much everything. I tried to go bowling but there was no one in the bowling alley so you can't do that. The strip club was empty as well. We didn't try the police computer but I wouldn't think so.

Wrong answer. You can only run from cops, jack cars. Nothing else.
