I have yet to see one that covers all vehicles though there are various topics on GTAF that come close to covering all. Best place to start would be the vehicle database which gives information on each vehicle. The topic itself is the most commonly used place where users post queries for vehicle locations or locations themselves.

where to find the maverick {once second island is unlocked}

where the seasparrow is {after second island unlocked}

where the 2 types of bmx are {only after second island is unlocked}

where to find the hunter {only after all main story missions are complete}
