This only works on the Mountainbike, unless you change files, etc with PC. This has been found before, well done for finding it yourself though. You need to be reversing to get this to work. While going backwards or reversing you need to press the peddle button really fast. I'm pretty certain it works for PC too. I have the Xbox version, and when I'm on a mountain bike, I'm holding reverse (L button) while rapidly tapping the pedal button (R button), but he's not melting like he did in the video.
