But it does depend on which GTA you are editing, 3 and VC are different that SA. VC is slightly different that 3 i think also. But its all easy. MAKE BACK UPS basically just replace the .dff and .txd in the gta3.img from the model folder(all the GTA's call the .img file gta3.img for some weird reason). Then replace the handing.cfg lines, carcols, etc in the data folder. The readme in most mods should cover all of that anyways... Viola, if it crashes either the mod doesn't work, or you installed it wrong. Also, for SA version 2 you can't do mods. Just so ya know. I think theres a way around that, but i dunno how. Since you didn't say which edition of GTA you are using or what type of mods you are trying to install, nobody can give you any help.
