Changing a vehicles animations

Some of you will know what I mean straight away with this. Basically I want to know how can I change the animations set for vehicles. An Example of this would be in Vice city, bikeh bikev and bikes (I think thats there names) could be changed around so that the Angel ingame would have the sitting position of the Pcj. How was this done, can anyone explain please? thanks
