Multiple Modded Versions on Steam?

Hey, having just got GTA V for Steam, I'm now ready to start modding again, albeit very cautiously this time around. Now I am interested in modding mostly cars, some peds, and some decoration parts of the map, and I'm wondering if you can possibly have not one but two versions of modded GTA V, along with the standard version - one for vanilla purposes, one for a 90s setting, and one for a lore-friendly British setting. I'd love to be able to switch between those three versions, but I'm very concerned about breaking the game again. How possible is this?

I guess you could copy "C:\Program Files (x86)\Steam\steamapps\common\Grand Theft Auto V" twice, mod two of them, and then rename the folders to "Grand Theft Auto V" depending on which version you want to play.

It will just use up a lot of disk space :)
