Three Leaf Clover from GTA IV (duh).

 

If you're asking about GTA V, then The Paleto Score. First mission which actually rewards the player with cash, the insane minigun action and ending with my favourite support character finally talking. Guess who it is.

I've found all the heists in the GTA series to be highly enjoyable, and therefore can't pick a single favourite one.

Three Leaf Clover for the sheer intensity. 

 

Though I have always had a soft spot the Jewel Store Job, the least violent heist in V but strangely my favourite.

Three Leaf Clover is definitely the most intense heist ever depicted in the series. Second spot goes to The Job from Vice City.

my favorite heist

the fib score option b with the fire rescue escape

the big one subtle option the car chase leading to the trucks was brilliant

monkey business

the casino heist in san andreas

the score from vice city

and in the mini heist category I choose minor turbulence and derailed. three leaf clover felt more like a big shoot out rather than a heist. there was no planning you start the mission you play look out then you escape and shoot your way up the street then under the subway system to until you go above ground to the getaway vehicles. did tlad and tbogt have any heist I haven't played that far in any game. also although it isn't gta the train robbery from rdr was good to.

Breaking the bank at Caligula's has the feel of Ocean's Eleven (actually I think that's where they got a lot of inspiration for the heist) which is an amazing heist movie and I recommend it to anyone who likes that kind of movies and didn't watch it yet, but anyway I liked how the heist had the preparation missions, something like V's setup missions and that brings a lot to the heist as you have a feeling you actually didn't just jump into it but you actually prepared for it. Also the Casino brings a certain coolness factor because most of the time you get a bank experience and rarely something else. Also who can forget the pissed off Salvatore Leone calling C.J telling him he'll kill him and his grandchildren if I'm not mistaken.

 

As for Three Leaf Clover in GTA IV it's my second favorite. I see that I wasn't the only one that found it really intense. First the bank, then the streets filled with LCPD and NOOSE covered in body armor and a showdown in the subway tunnels really show that R* put their time and effort into the mission, making it one of the best bank heists I've seen in video games.

I presume that they didn't so much focus on the preparation of the heist as they did the atmosphere during. The fatality at the beginning, the rush after it, the shootout in Chinatown, the helicopter scene (which is in my opinion great, remember it still from the trailer), the subway and the final run and getaway all make it a classic GTA mission, but still pertain a certain but small atmospheric vibe only accomplished in great heist movies.

From its presentation prep missions would've felt out of place as the McRearies gave the impression they didn't know what they were doing which is why the "planning" was done on the way to the bank. It foreshadowed the haphazardness of the hold up itself.

 

Personally I don't think Three Leaf Clover would have its charm if it was a well organised heist. The clumsy execution makes it feel more believe.

Any heist which doesn't give you an unavoidable wanted level and force you into an unnecessary shootout.

The whole point of a heist should be to get away scot-free and not have to get in these huge car chases and gunfights. After a while, it becomes a real chore.
