We're a long time until release and only have a minute trailer to chew on so far, but we can use this topic to collect evidence during pre-release to build up a database of what animals we'll see in Red Redemption 2. I'm sure there'll be some new friends, and hopefully some old ones too.
 
Here's what we've got from the first trailer (no cats, sadly.. :p).

Well we know from Undead Nightmare there are Sasquatches, lets hope we see them again this time if it is a prequel.

The first I'm sure it's an elk, not a common deer.

Bird looks like a seagull to me. Dead wolf is a bit similar to the dog thats standing there(the fur), but i'll have to take a look more careful. Maybe there's more dog types?

The beak and neck look kinda elongated and has a big wingspan, seems bigger than seagulls. I think it looks like one of these guys, a Great Egret

Maybe its her husband getting eaten by the vultures hence all the barking

It could be a squirrel whats been caught, looks like it's got a fluffy tail when you rewatch that part.

There were ants in Red Dead Redemption as well. Talk about detail. They are rendered in-game at "Rathskellar Fork" and in an old building at "Mercer Station". Zoom in with a sniper rifle and look at the ground.

On topic do you think Rockstar will add peyote planets into Red Dead so we can play as animals ?

It's possible the weasel could be an american badger. Looks a little big to be a common weasel. And like Matty said, really looks like he is getting a squirrel.

Cant wait to see the Grizzlies!

The Vulture food really looks like a Coyote. The size, color, and pointed snout matches up.

Thanks Cock&Balls! (never thought I'd hear myself say that). I've updated the OP.

Yeah I agree with Matty, I went through frame by frame and it definitely looks more like a squirrel being caught as it has a little bushy tail. Having zoomed in a bit, it must be a coyote chasing it though, as it's got a little bushy tail of it's own and probably a bit big to be a weasel, and we're familiar with coyotes already in this series.

You know how we got to see these turkeys eating a dead wolf while a dog was barking at them? I bet we won't see these things happening in the final game.   :(

I did some research and apparently mongoose aren't native to North America. But I am convinced it is an animal that is very similar.

After Googling images it definitely looks like that kind of animal, since it's quite "slinky" looking with a slightly bushy tail. We'll all be zoologists by the end of this lol.

Could be a Bobcat. That fits the visuals we have, being in North America feeding on rodents, small in size, except the tail seems a bit too bushy. 

 

I just think that coyotes would be in a pack hunting, just like they were in RDR1.

Yeah I had originally thought some kind of weasel, but thought maybe the coyote was more fitting since the legs are a bit longer and the weasels seem like short animals. Guess it depends on the perspective of the shot and it's not all that clear. Hmmmmmm.

Man, i hope bears are just as OP like they were in the last game, literally one of the best things in RDR were the bears and how they had "friends" avenging their deaths... they were big as a car but somehow they found a way to sneak on you.

The bigfoot's existence is not cannonical to the main game just RDR UN. I mean, that game had zombies and i bet my left nut that they are not gonna make an appearance in the main campaign.

Those are bison (no buffalo in the US). Gonna be interesting to see how many species of animals are in the game.
