To be honest, I never liked games' stealth-crouch option. Crouching isn't exclusive to stealth. You can sneak standing up, or make noise crouching. Yes, hunkering over in a gunfight or a sneak is great, and yes, it should have been in the game, but not crouching in stealth doesn't bother me. Not being able to crouch behind cover in a gunfight does.
Allow me to add another thing to the list:
In cinimatic cam (press/hold B or Circle in a car), you can change camera. Press R3 and you go into slow mo. No, not being able to change camera in slo mo has been mentioned, but what pisses me off is how the audio does not slow down. Slow mo comes on and the world slows, but the sirens, horns, engine sounds - they're all in normal speed. IV had it in, why take it out? To fit Yoga in?
I've ranted about how much has been taken out to fit in (i assume) the large map and underwater and sh*t, and i recently saw a great post touching on this* but whereas with GTA IV i was finding cool new things two years after buying it, it's been six months and I'm still finding new things that piss me off with V.
I actually think we could write a 200,000 word essay on what's missing from GTA V and what shouldn't be there. Ultimately we're wasting our time. I just wrote this post and thought "what the f*ck am I doing?"

The map is large and is great, but is mostly empty. 75% of it is wasted space like Alderney in IV. No one cba to drive out to desert to play darts. Paleto bay is pointless apart from one heist. The map misses a lot of interaction, from enterable buildings (GTA IV had a lot of apartments you could enter, walk to the roof to snipe targets or simply bottleneck the cops in a shootout/last stand - they were even effective for losing the cops; enterable restaurants etc) to activities with friends - you've all heard it: pool, bowling, air hockey etc etc.
These were all cut, it seems, to fit a pointless ocean floor in. Yeah, it was good at first but the novelty wore off. If rockstar made the map 50% it's size, cut the ocean floor, expanded LS's metropolitan area (why is there so little suburbs?) and allowed more enterable buildings, lots of little fire escapes from the subway tunnels (in the underground there's hundreds of doors that when i first played i thought would take me to the surface, in one tunnel there's even a ladder you can climb to... nowhere) and more activites when off mission.
The concept of a hardened criminal playing Tennis and only tennis is a bit lame. There's basketball courts (who didn't love that in SA?), there's pool tables in several locations, there's a split sides comedy clubs, countless eateries, the opportunity for beach volleyball and surfing - all of these things and we have 3 activities which get old fast, and the worlds largest underwater map. And Yoga.
