I just got into hill climbing and steep downhills etc, I know the best jeep is the Merryweather version of the Mesa, which is lifted and much stronger, how would I get one of these, after completing the Fort Knotz mission?

It's fine, but not as good as the other options. I've had a lot of luck using the Sandking SWB, which is really just as good as the Merryweather Mesa, although with much different characteristics (Sandking has much better ground clearance, but isn't nearly as articulated).

Also, a fully upgraded Adder is a beast off-road. It may be a low-slung hyper car, but awd paired with insane horsepower means it can drive up near-vertical cliff faces with ease. Just make sure you avoid exceptionally uneven/rocky areas.
