I really enjoyed it in Red Dead Redemption single player.

In single player it could have been at the casino, or a shack in the middle of nowhere with an interior lifted straight from RDR. Oh well.

In Online it could be a venue as above, but even cooler would be at your apartment. Buy chips, cards and optionally a table, get your mates around, set stakes and either tournament or cash game style and play...

I feel you man. There is so much things that I would love If It was in the SP. Poker, Black Jack, Pool, dating, gym, dance clubs or ballads, horse races, surf, basketball, baseball... Aparently, some will be in GTAO. I don't like online games, but what can we do?

We all want it, and no one is going to disagree with you but what else is there to do?

That said its also not as simple "lifting" somewhere from one game and plopping it into another. Although who the f*ck knows why Rockstar decided to leave out gambling for SP. You can bet it'll come to GTA:O eventually, they're probably working out how to balance it online and keep people from manipulating the system.
