For your computer monitor, Try:
Windows START button > Control Panel > Appearance and Personalization > Adjust screen resolution > (make your personal selections here).

for DVD (v1) and, If you have a stolen (warez/torrent/pirated) First Edition (v1) game you would need to apply the Official Patch v1.01 to add additional resolutions to the Game. Note: application of the Official Patch removes any ability to Mod the Game.

The Real Game, DVD (v2) and stream Download (v3) already have the ability to adjust resolutions.

Owners of NVidia graphics cards should be able to add custom resolutions in addition to the ones that the monitor reports over DDC. This is done from their proprietary Control Panel. There you can also specify how the resolution should be scaled or padded with black bars, if necessary to preserve sharpness.
