I'm looking for a list of everything you can do in San Andreas that does not count towards 100%. What I have thusfar come up with is: the 4 arcade games and the beat the cock triathlons. Is there more?

Yeah, the Burglary side mission, dating girlfriends, playing pool, getting all gang ares for Grove Street, doing the Unique Stunt Jumps, the Beat the Cock Triathlons, and the RC Baron race of Zero.
There's a lot of stuff that doesn't count towards 100% completion, so just check out the 100% checklist and anything that's not there doesn't count towards 100% completion.

Do unique stunt jumps, get all gang zones, burglary, girlfriends, play pool, go to lowrider meeting, RC Baron race at Zero's shop, etc...

Besides what's mentioned, here's some other activities that aren't compulsory: Purchasing all clothing from each shop (Binco, Didier Sachs, Victim, Sub Urban, Pro-laps, Zip), Hitman level in all weapons (Micro Uzi, Shotgun, AK-47, Tec9, Sawed-off Shotgun, Combat Shotgun, M4, Micro-Uzi, Tec-9, Desert Eagle, Silenced 9mm, 9mm, MP5), and acquiring the prestigious "king Of San Andreas" ranking.

thanks guys. I actually do know all of these activities, but I was using the 100 percent checklist to guide me through the game, but I didn't want to forget about the other stuff. So thanks.

The most important of them is perhaps the Burglary sidequest, it gives you infinite sprint when completed.
