Since you are on PS2, about the only thing you can do is go through each one again and find the missing one that way, i'm afraid.

What i did..... Start a new game. Start hitting all the first island jumps. Note the ones that don't register Hit them over and over again til you get it to register. Reload and hit again til you can hit every time. Then go back to your save and retry.
This worked for me to get my last 2 jumps on ps2. In my opinion, the hard to register jumps are all on first island.
I was missing the one over the water by the malibu club. The 2nd stairway jump going south down alleyway.
If you are on PC version, let us know

The pics shows coronas-- these were derived from the game code and show the actual "holes" you have to go through to make the jumps register.
Note unique jump #18-- (one I missed over the water by the malibu)-- you HAVE to get past the tree--
Also look at unique jump # 26 (the other I missed in the PCJ playground alley)-- you HAVE to turn to the right a hair to make this one register....
Other hard ones IMO--
#25 (you have to get past the trees so you need alot of speed)--- http://www.gtavice.c....php?image=3659
#28 and #29
#33-- which needs alot of distance..
I'm not saying that one of those is one you missed but in my experience and reading on this board-- those are some of the harder ones to register.
I do wish you luck...
PS... Note that the numbering scheme used for the above jumps is NOT standard-- meaning that this may not correspond to a particular list you may find in a guide or whatnot.
Here is a link to a vid showing the maliubu club jump I referred to -- it looks like this guy made video guides for all the jumps (grouped together in 4 jump sequences)-- these may help you as well.
